For us southerners red beans and rice are a must on Mondays. It’s a “Southern Tradition” along with doing laundry. So today we made red beans and rice.

Ingredients:
2 lbs dried red beans that have soaked in water overnight drained and rinsed.
1 pound smoked sausage (I had deer sausage that my son made so I used that but a good smoked pork sausage will work)
2 yellow onions diced
1 green bell-pepper diced
8-10 cups of water
2 Tbs roasted chicken Better than Bouillon
2 Tbs roasted garlic Better than Bouillon
Salt and pepper to the taste
Cayenne to taste (optional)
Cajun seasoning to taste (optional)
