
We are about to have our first real freeze where I live and this is my favorite way to use up any excess basil before it perishes from the freeze. It’s super easy and taste absolutely amazing! Enjoy!
Ingredients:
- About 6 cups of fresh basil
- Approximately 1 cup of roasted pine nuts or walnuts
- 1 cup of freshly grated parmesan cheese
- 1/2- 1 cup Extra Virgin Olive oil (adjust amount to the consistency you prefer)
- Lemon juice to taste (I use about 1-2 a lemon)
- Garlic (2-3 cloves)
- Salt and pepper to taste
Instructions:
Throw in a food processor and grind it up. Adjust ingredients to your taste and olive oil to the consistency you like.
Awesome over cream cheese and served with crackers.
