Garlic Parmesan Cream Sauce

Yesterday was one of those days where I didn’t have a plan for dinner. I was a little lazy and then my son (Noah) asked “Mama, what are you cooking for supper?” My little brain went into overtime so I quickly thought of deer sausage links and potatoes. Noah didn’t want potatoes so I looked into the pantry and I saw some tortellini. He agreed to pasta but I didn’t have a sauce so I threw this together and it was amazing!

Ingredients:

  • 1/2 stick of butter
  • 1/4 cup of flour
  • 1 ounce of cream cheese
  • 1 TBS Roasted Chicken Better than Bouillon
  • 1.5 TBS Roasted Garlic Better than Bouillon
  • About 4 cups Hot Water
  • 1 cup Heavy whipping cream
  • 1 tsp Onion powder
  • 2 cups of fresh spinach
  • 1 cup freshly grated Parmesan
  • Salt and pepper to taste

Instructions:

Make a roux by melting butter and adding flour. Stir until well combined. Add the roasted garlic and roasted chicken better than bouillon then the hot water. Stir until well incorporated. Add onion powder and cream cheese and stir until the cream cheese is melted. If too thick you can add water as needed Add spinach and let simmer until wilted. Add whipping cream then Parmesan and stir. Taste to make sure it’s seasoned to your liking and adjust accordingly. I mixed this sauce with one pound of cheese filled tortellini. My son approved.

Notes:

This is a versatile sauce and can be used in many different ways.

If you add shrimp or crawfish I would put a little lemon juice.

You can add sun dried tomatoes for a little pizzazz.

Use it with some chicken and spoon over pasta.

You can use chicken broth and garlic cloves but I LOVE Better than Bouillon and I was trying to be quick.

Be creative….you can’t mess it up!
