Cancer took a toll on us financially. We had to close our business, my husband was out of work to care for me while I received treatments and recovered from surgery. We spent a total of 3 months in Houston while I received care at MDA. Cancer took us for everything we had. We’re home now and we’re so grateful that we can say that. WE ARE HOME! With the financial burdens we face I knew we had to make serious adjustments to our way of living. With inflation I knew our grocery bill was at the top of the list. One of the things that stood out to me when I went grocery shopping when I got home was how high bread was. I noticed a 5 lb bag of flour was the same price as a loaf of bread. I decided then I’m going to make our own bread! So here’s the recipe for the bread I make. My family loves it but I’m still experimenting and will try new ways as time goes by.

Ingredients:
2 cups warm water (about 110 degrees)
1 3/4 TBSP yeast
1/3 cup sugar
1/4 cup canola or vegetable oil
1 tsp salt
5-6 cups of all purpose or bread flour (do not pack flour). Bread Flour will have a chewier texture.
Directions:
Mix 2 cups of warm water with yeast and sugar. Let sit until it becomes foamy (about 10 minutes)
Add oil and salt and mix
Add flour one cup at a time.
Mix using a dough whisk until dough begins to take shape. Not sticky but not dry. You want the dough to be moist but not sticky. Add a little bit of flour at a time until it is workable and doesn’t stick to your fingers.
Once dough reaches the ideal consistency knead it for about 10 minutes and shape into a ball.
Put into oiled bowl and cover with towel until doubled in size
Once dough doubles in size punch down and divide into even pieces. Shape each piece into loaves and put into greased loaf pans. This will make 2 loaves.
Preheat oven to 350
Once dough doubles in size again place in oven and bake at 350 for 30 minutes.
Remove from pans and place on cooling rack.
