Ingredients:

1 1/2 cups Medium Grain Rice

3 TBSP Rice Vinegar

1 TBSP Sugar

1/2 TSP salt

Imitation crab

Avocado

Cucumber

Spicy mayo ( 1 cup mayo and 1/4 cup sriracha)

Hoisin Sauce

Sesame seeds (optional)

Crispy onion topping (optional)

Green onion (optional)

Instructions:

  • Cook rice as instructed.
  • While rice is cooking mix together vinegar, sugar and salt.
  • When rice is done add vinegar mixture to rice and toss to fluff
  • In a bowl place rice, cucumbers, avocado, to your liking. Top with spicy mayo, Hoisin Sauce, onion topping, sesame seeds, and green onion.

Notes:

This dish is very versatile. You can substitute the rice with zucchini noodles or cauliflower rice for a low carb option.

You can add carrots, chopped nori, shredded cabbage, etc. Just get creative and enjoy!
