Creamy Loaded Potato Soup

Ingredients:

  • 4 Russet Potatoes
  • 10 slices of bacon (reserve drippings after cooking)
  • 1 large onion finely diced
  • 10-12 cloves of garlic minced
  • 2 cups of heavy whipping cream
  • 3-4 cups of chicken broth
  • 1/4 cup AP flour
  • 1/4 cup of butter
  • salt and pepper to taste
  • chives for garnishing
  • your favorite cheese for garnishing
  • sour cream for garnish (optional)

Instructions:

  1. Cook bacon until crispy then remove and set aside. Reserve grease
  2. Use the bacon grease to cook onions until they are transparent
  3. Add potatoes and cook for about 5 minutes.
  4. Add butter and garlic and cook until fragrant.
  5. Add flour and stir until mixed in.
  6. Add chicken broth and let simmer until potatoes are fork tender.
  7. Then add whipping cream and let simmer on medium heat until thickened. Season with salt and pepper and taste. Adjust as needed Once soup is to desired consistency remove from heat.
  8. Crumble bacon.
  9. Serve in bowls topped with bacon, chives, cheese, and sour cream.
