Ingredients:
- 3 cups rice
- 1 onion finely diced
- 5 cloves garlic minced
- 1/2 cup oil
- 1 can fire roasted diced tomatoes (puréed)
- 1 TBS tomato bouillon
- 1 TBS chicken bouillon
- 6 cups water
- 1 poblano pepper or jalapeño pepper (optional)
Instructions:
- Rinse rice
- Add oil to pot and once hot add rice. On low to medium heat cook rice until golden. Stirring frequently.
- Add onion, garlic, tomatoes, water, tomato and chicken bouillon and stir to blend.
- This is optional but if you like a little spice you can add a poblano or jalapeño pepper to the rice. Just set on top and let cook with rice.
- Bring to a boil then cover and cook on low until rice is done.
