Mexican Rice

Mexican Rice

Ingredients:

  • 3 cups rice
  • 1 onion finely diced
  • 5 cloves garlic minced
  • 1/2 cup oil
  • 1 can fire roasted diced tomatoes (puréed)
  • 1 TBS tomato bouillon
  • 1 TBS chicken bouillon
  • 6 cups water
  • 1 poblano pepper or jalapeño pepper (optional)

Instructions:

  1. Rinse rice
  2. Add oil to pot and once hot add rice. On low to medium heat cook rice until golden. Stirring frequently.
  3. Add onion, garlic, tomatoes, water, tomato and chicken bouillon and stir to blend.
  4. This is optional but if you like a little spice you can add a poblano or jalapeño pepper to the rice. Just set on top and let cook with rice.
  5. Bring to a boil then cover and cook on low until rice is done.
