Lemon Bundt Cake

Ingredients:

For the cake:

  • 1 box of lemon cake mix (do not follow instructions on box)
  • 4 eggs
  • 1 stick of butter melted
  • 1 cup of milk

For the Glaze:

  • 1 cup of powdered sugar
  • 2 TBSP of freshly squeezed lemon juice

For the Icing:

  • 3 ounces cream cheese (softened)
  • 2 cups powdered sugar
  • 1 TBSP butter (softened)
  • 1TBSP milk
  • 4 TBSP freshly squeezed lemon juice

Instructions:

For the cake:

Preheat oven at 350. Mix cake mix, eggs, butter, and milk on low speed until just blended. Once blended beat on medium speed for 2 minutes. Once mix is well blended pour into a well greased Bundt pan. Bake at 350 for about 35 minutes or until it passes the poke test. When cake is done let cool completely.

For the glaze:

Mix powdered sugar and lemon juice until well combined. It will be a little runny since it is a glaze.

For the icing:

Mix cream cheese and butter then add powdered sugar and milk and mix. Once combined add lemon juice and mix until smooth.

Once cake is cooled turn onto plate or other flat dish. Dip a spoon into the glaze and let it drip onto cake while going into a back and forth motion. Keep dipping spoon as needed.

After you have glazed the cake you can do the same process with the icing. The icing will be thicker so you can put into a ziplock bag and cut the tip but the spoon method worked well for me.!
