So we raise chickens and they have been producing A LOT of eggs! We sell some, give some away, and trade them and still have lots of eggs so I decided to start using more eggs with our meals. I’ve made egg muffins before but knew they could be better and today I was in the mood to experiment. Noah had football practice and I like to fix him a high protein meal for him after practice. We were both shocked at how good these came out. These are so versatile…you could literally throw anything you like in them!

Ingredients:
1 Dozen Eggs
1 cup cottage cheese
1/2 of a medium onion finely chopped
8 ounces Jimmy Dean sausage (crumbled and browned)
2 cups fresh baby spinach (optional)
1/2 – 1 cup of your favorite cheese freshly grated ( I used sharp cheddar)
Salt and pepper to taste
1 tsp garlic powder
Tony’s seasoning to taste
Dash of red pepper flakes
Instructions:
Pre Heat oven to 375
It’s best to use baking cups but if you don’t have any make sure you grease the muffin pan well.
Sauté onions and Sausage together until browned and wilted.Add spinach about 5 minutes before done and cook until wilted and remove from heat. Evenly fill the bottom of the muffin pan with the sausage mixture and set aside.
In a food processor add eggs, cottage cheese, and seasonings and blend until smooth. Pour the egg mixture on top of the sausage mixture without overflowing. With a knife gently stir the mixture so it sinks past the filling.
Out in oven and Bake at 375 for about 12 minutes then remove from oven and top with cheese. Put back in oven until cheese melts.
Remove and let cool before serving.
