
Ingredients:
1 pound penne
1/2 an onion finely chopped
Approximately 8 cloves garlic minced
1/2 stick of butter
1/4 cup flour
2 cups chicken broth
1 cup heavy whipping cream
1/4 block of cream cheese
2 cups finely grated Parmesan divided. Save 1 cup for serving
Sun dried tomatoes to taste
Tuscan seasoning to taste
Garlic powder to taste
Salt and pepper to taste
Baby spinach (optional)
Fresh chopped basil for garnishing
1 pound large shrimp
Creole seasoning
Instructions:
- Cook Penne and set aside
- In a skillet add butter and onions and sauté until translucent.
- Add garlic and sun dried tomatoes until fragrant
- Add flour and continue stirring until butter is absorbed.
- Once butter and flour are incorporated slowly add chicken broth and whisk until flour is dissolved.
- Add cream cheese and continue to whisk until melted and incorporated into chicken broth
- Add whipping cream and Parmesan and whisk over low heat until desired consistency is achieved. Can add chicken broth to thin and more cream cheese to thicken if needed.
- Add spinach
- Add Tuscan seasoning, salt, and pepper to taste.
- Taste and add seasonings to suit your taste. May need to add some garlic powder if desired.
- Add penne to skillet and mix until coated.
- Season shrimp with your favorite seasoning and grill and serve on top of pasta.
- Garnish with Parmesan and Fresh Basil and serve.!
Notes:
This recipe is very versatile and can be easily adjusted to your taste. Just add your favorite seasoning and taste as you go. You can’t mess it up and it’s such an easy meal to prepare.
